White Sonora Pancakes Recipe

White Sonora Pancakes Recipe (Fluffy & Buttery)

Better than the box mix and just as easy! These pancakes are thick, fluffy, and buttery. Don't skip the White Sonora flour, it makes a huge difference, and you'll notice the incredible flavor and texture.

Ingredients

For the pancakes:

120g (1 cup) all-purpose flour

120g (1 cup) White Sonora flour 

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

420ml (1 3/4 cups) buttermilk

60g (1/4 cup) unsalted butter, melted

50g (1/4 cup) granulated sugar (or sweetener of choice)

2 tsp pure vanilla extract

1 large egg

Toppings (optional):

Fresh blueberries

Fresh strawberries, sliced

Banana slices

Chocolate chips

For cooking:

Vegetable oil (for greasing the pan, not butter)

Instructions

Prepare Dry Ingredients

In a large mixing bowl, whisk together the White Sonora flour, all-purpose flour, baking powder, baking soda, salt, and sugar until well combined.

Mix Wet Ingredients

In a separate bowl, whisk together the buttermilk, melted butter, vanilla extract, and egg until smooth and fully combined.

Combine Wet and Dry Ingredients

Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined. Be careful not to overmix—the batter should be slightly lumpy.

Rest the Batter

Let the batter rest for 10–15 minutes. This will help the pancakes become fluffier as the flour absorbs the liquid and the baking powder activates.

Heat the Pan

Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with vegetable oil (using a paper towel to wipe off excess oil is a good technique to avoid greasy pancakes).

Cook the Pancakes

Using a cookie scoop or a 1/4 cup measuring cup, portion out the batter onto the heated pan, forming round pancake shapes. Cook for about 2–3 minutes on the first side, until bubbles start to form on the surface and the edges appear set. Flip the pancakes and cook for an additional 1–2 minutes on the other side, until golden brown and cooked through.

Serve with Toppings

Once cooked, remove the pancakes from the skillet and keep them warm. Serve with fresh blueberries, sliced strawberries, banana slices, and/or chocolate chips as desired.
