100% Rye: White Chocolate Caramel Brownies Recipe

Ingredients
170g unsalted butter
226g chopped chocolate or chips (semi-sweet or dark)
150g light brown sugar
50g granulated sugar
3 large eggs
1 tsp vanilla extract
90g rye flour
½ tsp salt
100g caramel pieces or bit
100g white chocolate chips
Flaky sea salt
Instructions
Preheat oven to 350°F. Line a 8-inch square baking pan with parchment.
Melt 170g butter and 200g dark chocolate together in a heatproof bowl (microwave or double boiler). Cool slightly.
Stir in 150g brown sugar and 50g granulated sugar.
Add 3 eggs one at a time, mixing until glossy.
Stir in 1 tsp vanilla.
Fold in 90g rye flour and 1/2 tsp salt just until combined.
Gently fold in 100g caramel pieces or bit and 100g white chocolate chips
Spread the brownie batter into the pan and smooth it out.
Top with flaky sea salt or additional white chocolate chips
Bake for 25–30 minutes, until the edges are set and a toothpick comes out with moist crumbs.
Cool fully before cutting — this helps the caramel set and gives clean slices.
