Our Proof Bread Flour is stone-milled from a locally grown modern Hard Red Spring wheat. It is ready to be part of all your favorite recipes, straight from Proof Flour Mill to your kitchen.
Stone-milled on Proof's New American Stone Flour Mill and sifted to remove about 15% of the largest bran and germ particles, we then temper the flour to remove more bran from the final product. This gives you a flour that manages to be incredibly versatile and easy to use, while still giving you remarkable depth of flavor.
We mix this flour with stone-milled heritage grains for much of our menu, and you're welcome to do the same or enjoy it on its own.
