This 2,000g naturally leavened miche is a celebration of khorasan wheat—an ancient grain known for its rich, buttery flavor, golden hue, and gentle sweetness. We fresh-mill whole khorasan berries and make the resulting flour into a porridge before introducing it into a base sourdough recipe.
Expect a deeply caramelized crust, a custardy crumb, and a flavor profile that's nutty, earthy, and layered with subtle notes of honey. This miche is slow-fermented, and the Khorasan recipe has fast become a staff favorite at Proof. Compared to typical sourdoughs the crumb has a softer and more moist texture. This loaf keeps really well.
Perfect for feeding a crowd, or savoring slice by slice all week long. It’s more than bread—it’s an experience.
This is a pilot program. Bread ships out on Monday, Tuesday, or Wednesday. Orders placed Monday through Saturday will ship out early the following week. These loaves take multiple days to make. Day 1 is sourdough starter preparation, Day 2 is mixing, bulk fermentation and shaping. Day 3 is baking and shipping. Sunday orders will not ship until the following week.
